Groundhog Stew
2 cups carrots, chopped coarsely
2 cups celery, chopped coarsely
4 large Yukon Gold potatoes, quartered
4 small onions, quartered
2 cloves garlic minced
1 Tbs. salt
1 tsp. pepper
1 tsp. rosemary, chopped finely
1 tsp. thyme, chopped finely (lemon if you have it)
4 cups beef broth (College Inn Bold is great)
Combine above ingredients in a large pot and bring to a boil. Grab Phil, hold him over the pot, knock him over the head with your biggest ladle and ask him if he sees his shadow...If he says yes, hit him again and reask the question. If he says yes again, drop him.

I have to confess I re-read the ingredients like 3 times thinking, where's the groundhog, and does Don hunt groundhog, before I read the rest of the post and realized it was a joke!
